Vinification: the hand-harvested grapes are destemmed and placed in open vats where alcoholic fermentation takes place in contact with the skins without temperature control. Alcoholic fermentation lasts about 15 days during which the mass is repeatedly punched down. At the end of alcoholic fermentation, the wine is separated from the skins with soft pressing and placed in steel tanks to carry out malolactic fermentation. At the end of the malolactic fermentation, the racking follows. The wine is left to age in 500-liter wooden barrels until the following summer.

Producer profile:
The vineyard and cellar overlook the Mount Limbara where you can admire a fantastic sunset and sunrise. Our wines are the children of this rich and generous land, where granite, sun and wind are the masters. A family business founded 30 years ago and now managed by sons Antonello and Stefano. About 10 hectares of vineyards in Gallura, where Vermentino gives rise to precious, full-bodied and intense white wines. Ancient methods and new machinery, cultivation and winemaking techniques that are always at the forefront to guarantee authentic aromas and flavors. An estate where care, attention to details and to the quality of the product contribute to creating unique and exclusive wines. The vineyards for Vermentino are trained in espalier on soils deriving from granite decay that bring great minerality to the wines.
